Ice Lollies for Kids
These little frozen creations on a stick are good for kids as there are no artificial colourings or flavourings to worry about. Also they contain fresh fruit juices deliciously sweetened with Whitworths Golden granulated sugar.
You can buy special ice lolly mould kits from large stores and good kitchenware shops. However it is also quite easy to make your own moulds by recycling small plastic pots that come with commercially made yoghurt or mousse, or even small picnic tumblers.
The art of getting the stick in the centre is easy. Fill the moulds with the prepared liquid and fruit. Add the stick centrally into the liquid and anchor it with a double folded strip of kitchen foil, twisted around the stick, with the ends secured around the edges of the cartons until it freezes. Here are the recipes, get the kids to help you make them, but make sure that they don't sample too many of the mouthwatering ingredients before you get them into the moulds.
The recipes make 10 small ice lollies and several more if you add fruit segments.

Equipment & Ingredients

175g / 6oz Whitworths Golden granulated sugar |

300ml / ½ pt organic, unsweetened apple juice |
|
| • |
1 small, eating apple (red or green) |
|
| • |
10 - 12 red pitted cherries, halved (optional) |
|
Method
Put the sugar and water in a saucepan and heat gently until the sugar has dissolved. Boil, without stirring for 3 minutes. Remove the syrup from the heat and mix with the apple juice and lemon juice and set aside to cool. Slice the unpeeled apple into thin crescents and divide evenly with the cherries into the moulds. Now top up the moulds with the apple liquid and freeze on sticks until solid.

Orange Salad Lollies
Equipment & Ingredients

200g / 7oz Whitworths Golden granulated sugar |

300ml / ½ pt freshly squeezed orange juice |
|
| • |
2 tbls fresh lemon juice |
|
| • |
A small selection of orange and mandarin segments, (fresh or tinned) |

Method
Prepare the syrup with the sugar and water as above. Mix with the orange juice and lemon juice and set aside to cool. Divide the orange and mandarin segments into the moulds and top up with the orange liquid. Add the sticks and place in the freezer and leave until frozen.

Ruby Grapefruit Lollies
Equipment & Ingredients

300ml / ½ pt ready squeezed ruby grapefruit juice |

2 tbls fresh lemon juice |

Method
Prepare the sugar and water as above to make a syrup. Add it to the fruit juice and top up the moulds. Add the sticks and place in the freezer until frozen.

Pina Colada Lollies
(Makes 14 small lollies)
Adults as well as children will love this recipe and, if desired add a slug of Malibu, which is a mixture of white rum and coconut.

300ml / ½ pt pineapple juice |
|

2 tbls fresh lemon juice |
|

8fl oz tinned coconut milk |
|

4 tbls malibu (optional) |

Small selection of fresh, or tinned tropical fruits, to include, mango, or papaya, diced |

Method
Put the water and sugar in a saucepan and heat gently until the sugar has dissolved. Boil without stirring, for 3 minutes. Remove the syrup from the heat and add the pineapple and lemon juice. Add the fruit to the moulds. Stir the cooled liquid and pour it into the moulds. Add the sticks and freeze until solid.

Tip
To speed up the freezing process - Turn your freezer or the freezing compartment of your refrigerator to its coldest about 1 hour before the liquid will be ready for freezing. Place the empty lolly moulds in the freezer to chill them before you add the liquid.
Tip
For richer fruitier flavoured ice lollies - You can substitute the fruit juice for pureed fresh fruits, allowing 450g / 1lb of fruit to make 300ml / ½ pt liquid. Use red berries, (sieve out any pips) pitted cherries, lychees, banana, mango, papaya or any of your favorite fruits.
