Toffee Snap Apples
(Makes 8)
A tray of of crisp juicy apples with a golden crunchy coating of caramel make the perfect treat for a bonfire night party and perfectly harmonise with the wonderful golden tones of Autumn.
For the caramel use the large golden crystals of Whitworths demerara cane sugar renowned for making excellent confectionery, golden syrup, (a by product of sugar refining ) and butter, with just a hint of malt vinegar to lift the sweetness for a delicious flavour combined in every crunchy bite of toffee.
You will also require a sugar thermometer and small wooden sticks for the toffee apples (see tip).

Method
First prepare the apples. Remove the stalks and prod a wooden stick (see tip) into the centre of each apple (stalk end) and set them aside on a tray lined with greaseproof paper, while you prepare the caramel. Half fill a large mixing bowl with cold water and ice cubes set it to one side.
Add all of the ingredients to a heavy based, deep, medium sized pan set over a moderate heat, stirring occasionally until the sugar has melted. Stop stirring and adjust the heat so that the syrup maintains a steady light boil. Leave until the sugar thermometer reaches 154°C (310°F). Remove the pan immediately from the heat and carefully plunge it into the reserved bowl of cold water (this prevents the hot syrup from cooking further).
When the bubbles have settled. Tilt the pan and using the stick to hold the apple, carefully twirl each one in the hot syrup. Lift out and twist once or twice to drain off any excess syrup. Leave the toffee apples to set on a sheet of greaseproof or Bakewell parchment. Eat on the same day they are made.
Tips
Party Tip
Children love toffee apples as party gifts. Place the toffee apple in a small cellophane bag. Add the child¹s name to a small label, and tie the label with coloured string around the top of the stick to secure the cellophane.
Toffee Apple Sticks Tip
If you find toffee apple sticks difficult to source, visit your local wood merchant who usually stocks very small wood doweling. You will have to buy a minimum metre length but it is quite reasonable. Cut the doweling into 14cm / 5½in lengths then prod into the centre of the apples. (In the picture I have used wooden Chinese chop sticks cut to the same length size as suggested for the doweling).
Safety Tip
Take care when making toffee it gets very hot. My best safety tip is to heat the caramel on the back hob ring furthest away from you, then if any spills it goes onto the hob not over you.
