Sweet Peanut Chicken
(Suitable for 4 people)

Whitworths light soft brown sugar with its pale honey coloured grains and mild caramel flavour goes in both the soy marinade and the peanut and coconut sauce gently spiced with chilli. This very special stir- fry chicken dish is ideal for a dinner party of 4 people, when I usually serve it with American Quick Cook long grain rice.


Equipment & Ingredients

550g (1lb.4ozs) Mini Breast Fillets
cooking oil (peanut or groundnut)
1 onion cut into thick wedges
140g (5oz) snow peas

For the soy marinade
3 tbls light soy sauce
1 tbls medium sherry
2 tsps Whitworths light brown soft sugar

For the peanut and coconut sauce
175g (6oz) smooth, or crunchy peanut butter
2½ tbls tomato ketchup
6 tbls light soy sauce
3 level tsps ground coriander
1½ tsps chilli powder
3 cloves garlic, crushed finely
2¼ tbls Whitworths light brown soft sugar, or golden caster sugar
20 fluoz (1pt) canned coconut milk
1 tbls lemon juice


Method

Prepare the marinade. Mix the ingredients together in a shallow bowl and add the chicken. Leave the meat to marinate for 2 hours or more.

Prepare the peanut and coconut sauce. Add the ingredients to a small saucepan and mix together until you have a smooth paste. Heat gently for 30 seconds stirring continuously, then set aside.

Add 2 tbls of cooking oil to a hot frying pan, or wok, set over a high heat. Stir-fry the onion and snow peas keeping them on the move with a spatular for 2 minutes.

Strain the meat from the marinade and add to the wok. Stir- fry for 3 minutes, then pour over half of the peanut sauce and continue to stir-fry for a further 3-4 minutes until it thickens. Add more if you think it necessary, (any leftover sauce will freeze successfully for a future occasion).

Serve straight away on a bed of freshly cooked rice.


Sweet Tip

This recipe uses Whitworths icing sugar to make a very pleasant sweet peanut flavoured icing, or sweet golden sauce for a hot pudding.

Add 3 tbls smooth, or crunchy peanut butter and 6 tbls Whitworths icing sugar double sifted with 5-6 tbls water to a small saucepan and mix together over a low heat until smooth.

Drizzle over nut based biscuits or cakes and leave to set, or serve hot and saucy poured over steamed sponge puddings, to make a delicious treat for kid’s who love peanut butter.
