Soy Glazed Pork served in Lettuce Cups
(Feeds 4 - 6 people)

Whitworths soft brown cane sugar sugar and rich soy sauce add a blissful fusion of sweet oriental flavours to the pork marinade which both tenderises the meat and adds an appetising glaze to the finished dish.

Serve in crisp lettuce leaves a'la edible bowls ! Add cooked rice. Or alternatively in double-quick time add the glazed pork pieces with salad to soft tortillas (see tip for party wraps).


Equipment & Ingredients

550g / 1lb 4oz pork fillet
2 tbls peanut oil
6 or 7 fat spring onions, stalks removed and halved
Freshly ground black pepper
1 small crisp lettuce, such as cos or iceberg
Quick cook long grain rice

For the marinade
6 level tbls Whitworths light soft brown sugar
8 tbls rich soy sauce
2 level tbls tomato ketchup


Method

To make the marinade
Place the marinade ingredients in a medium sized mixing bowl and stir together. Trim the meat of any fat and slice it into thin discs. Allow pork to marinate for 30 minutes - 1 hour, or longer if you wish.

Heat the oil in a wok or a frying pan. Drain the pork from the marinade and reserve marinade. Stir-fry for about 5 minutes, then add the onions and stir fry for a further 5 minutes . Pour over the marinade. Season with pepper and leave it to simmer fairly rapidly for 2 or 3 minutes, then using a slotted spoon remove the pork and onions from the sauce and keep them warm under foil.

To make the glaze
Continue to cook the sauce remaining in the wok or frying pan until it is thick and glossy then return the meat mixture to the sauce and stir together until the pork pieces are well coated and cooked through.

Place rice and sticky pork in serving bowls or scoop the pork in crisp lettuce leaves, a'la edible bowls! and serve with rice in a separate bowl, (or see alternative serving tip for party wraps).

Just add the soy glazed pork, with freshly chopped tomatoes, (their acidic flavour lightly sweetened with 1 or 2 tsps of Whitworths caster sugar), lettuce and onion to lightly warmed tortillas, then just wrap and go!
